What is a Dunkelweizen?

The Bluebonnet Brew Off is right around the corner. What better way to maximize your chances in winning than with a co-brew. We decided to work together on this one. Dan uses a Frankenstein of a system. He build this own electric brew in a bag system with a homemade RIMS heater and PID. This system is really awesome. Because of the time of the year, they decided to go with a Dunkelweizen.

Similar to a Hefeweizen, a Dunkelweizen is brewed as a darker version with deliciously complex malts and a low balancing bitterness. Creamy and full-bodied, most Dunkelweizen are medium amber to amber-brown and appear slightly murky from the weizen yeast. Clove) and banana character will usually be present in the nose, and some examples may even taste like banana bread.

Dunkelweizen Recipe

  • 4.5 lbs Wheat Malt

  • 2.25 lbs Pilsner Malt

  • 2.25 lbs Munich

  • .5 lb Special B

  • .5 lb Crystal 40L

  • 2 oz Carafa II (cold steeped)

Instructions

  • Mash: 152˚F for 60 mins

  • Steep carafa II grain in 12 oz of filtered water for 24 hrs

  • 60 min boil

  • 1 oz Hallertau at 60 mins

  • .5 oz Hallertau at 15 mins

  • Mangrove Jack’s Bavarian Wheat M20 Yeast at 65˚F
